UNDER (permanent i suspect) WORK

Food (like music) is - in my opinion - an important part of a culture.(perhaps because i come from a country where it is the case).
Wherever i go, i HAVE TO sample the local food (and , if i can, i try to pick a couple of receipes to bring home, i just LOVE to cook).
After a couple of questions here, i felt the need to share some of them.

I don't pretend to write a cooking book. What i can guaranty, is that all of them have been home tested (and some had to be a bit adapted due to either unavailable ingedients or too complicate (for me) methods - in this case i try to mention : a. the original - b. what i used instead).

They are only "guidelines" : all of them are family type receipes and thus have to be adapted (depending on tastes and available ingredients)

I will add photos if i can (but to do this i have to cook the same plate and it may take some time before - or have it at friends).

Since they will be put in the travel pages, here are the shortcuts to find them, sorted by country.
Only fresh poducts have been harmed preparing them

FRANCE : cuisine bourgeoise

Plain daily receipes - not specific to any given region


PS : Please, could someone tell me what "French" cooking is ?

I have absolutely no idea what this means (it seems so much to depend from the visitor origins). Myself, i know : alsacian cooking, provencal, perigordan, antilian and so on.... they have not much in common.

The classics
- Galette des rois (Epiphany speciality)
- Creme brulee (dessert)
- Mousse au chocolat (dessert, gluten free).
- Gluten free chocolate cake.

And coming from the sunny Martinique :

TUNISIA (south) : Khadidja's receipes

Khadidja is my best friend's grand-mother. She is an elderly tunisian lady who kindly accepted to share her receipes

More rice based than pastas

FROM HERE AND THERE

SInce we spent a large part of my chidhood and youth in West Africa (Togo, Benin, Burkina Faso,.... ) thanks to my father professional obligations, and since my mother used to collect local receipes too ....(and those may well be my least outdated infos about those countries)

For instance, Benin has very interesting dishes (especially if you want to refuel your inner dragon).

SPECIAL INTEREST, diets, etc ...

I have some vegetarian or gluten free receipes too among them.
If they belong to a specific place they will figure at the corresponding location (but with the indication vegan, vegetarian, gluten free, kocher, etc...)
