so you ll take the oyster in your left hand and with an appropriate knife (this one is a diver knife), you ll put the knife on the end and top of the animal

take care with your hands, shell and knife could damage them

how?

you ll introduce softly the sword inside the shell

take care with your hands, shell and knife could damage them

turn your right hand soflty in right and left to introduce more and more

take care with your hands, shell and knife could damage them

how?

push softly your right hand to cut the nerve inside the shell, take of the up part and keep the thin part of animal

take care with your hands, shell and knife could damage them

HOW or waooohhhh

the shell is open, now take of little parts of shell that you have broken, verify if the animal is still alive (it ll react with lemon)

IT S IMPORTANT THAT THA ANIMAL IS ALIVE, in other case, you could be ill

Thanks, Lionel, for your tips and pics (and visiting my Arcachon page!) A friend of mine is going to Bearitz this month. I advised him to visit Arcashon. May be someday I'll return there (since 1995 passed a lot of water...)

Enjoyed your comments about Arcachon, Pyla and the oysters. I married a French girl there many years ago, return once in a while and still have in-laws there. Before that, I lived in Bx on the rue Piliers du Tutelle for about a year. Best regards--- Don

Quite an interesting place, its a shame I didnt have the time to visit the main town of Arcachon. However, you warning tip about "Baines" is most helpful.Regards.
