Mushrooms near our home

by LosiCa - last update: Jan 11, 2006

4-in-1 Leccinum scabrum
This is a very good mushroom known in English as the Jack-Pine mushroom. Usually they grow one at a time, but these 4 grew up together and actually share the same cap!
Armillaria mellea
These mushrooms are known as "chiodini" (little nails) in Italian and as honey mushrooms in English. They are quite good in sauces, especially when they are young and very fresh, as seen in this picture.
Peziza aurantia
This mushroom is called the orange peel mushroom in English. Even though it has a very strange appearance, it is actually edible, even raw. Its red-orange color against the green grass is lovely.
In English this is called the butter mushroom or, more commonly, the slippery Jack, since the cap is always a bit slimy and should be peeled, removing the slick brown covering, before cooking and eating. It is one of the few boletus family mushrooms having a veil covering the yellow tubes under the cap when young. The veil then becomes a ring on the stem when the mushroom matures. Like the others, it is edible, but has been know to cause allergic reactions in some people.
Agaricus comatus (young)
This mushroom is quite good in mixed mushroom sauces, but must be used only when it is young and completely white inside the cap, as seen in the photo. It should not be eaten with alcoholic beverages, as it can cause reactions in some people. It's called the shaggy inkcap mushroom (see below).
Agaricus comatus (old)
This is a picture of the same shaggy inkcap mushroom above when it gets old. In fact, as it ages, the cap becomes pink, then violet, then black inside, opening up like a bell. The bottom of the bell curls upwards and liquifies like ink, actually dissolving. For this, it is known in English as the shaggy inkcap mushroom.
Boletus granulatus
This mushroom is called the weeping bolete (from its scientific name) because drops of liquid ooze out from the yellow tubes under the cap.
