Taking inspiration, recipes and no little tableware from his beloved Languedoc, Jean Michel Gauffre reminds Edinburgh that the French can be perfectionists when it comes to the table. That?s no ordinary salt on the melon starter but fleur de sel de Camargue, autographed by the master salt maker no less (are you listening, Saxo?). His brandade could hardly be more authentic. And as for the duck confit, I drool at the memory of its melting flesh, crisp skin and, yes, no doubt the saturated fat of deep-fried Elvis. But pah! Just show me the cherry clafoutis to finish.
