Every night in the summer dozens of people go to Oia which is at the tip of the island to see the sunset, have some white wine and eat pistachios. Its a beautiful view of the bay and the water and there's an old monastery that's in ruins but you can climb up on the roof and lay back to watch the sunset and talk to people there because everyone is friendly.

Since there can be a few people there for the sunset we decided to go out really late at the bars and go back to see the sunrise instead. Wow that was even better its a sunset in reverse but we were the only ones there. Definitely if you are leaving the bar at 5 AM and you dont have to go right home try taking a trip out to the water to see the sunrise over the Caldera.
