italians consider every meal (but mainly lunch) almost as a ritual. They eat very fast and in large quantities, but it doesn't mean that they eat anything in front of them. There's always have to be wine, cheese, bread and salad in a meal, with olive oil and some dressing.
If you go to Italy try to eat everythig on the dish, they won't get angry if you don't, but they will feel that you didn't like the food. But when you're done, make compliments to the 'mamma' (mother) who is the one that usually cooks. Do not hesitate in saying 'basta' (stop) when you don't want to eat more, otherwise they'll pour more and more food in your plate.

At the end of the meal, take a peace of bread and litteraly 'clean' the dish. Probably is not very polite in an elegant or serious dinner, but in an informal meal with relatives, friends or in a restaurant you're expected to do so.
