Lublin, being sort of off the beaten track, as few must sees however I would have to recommend that you pay a visit to it's castle. It is notable for its large museum and for the frescos that are located in the castle chapel. These latter items are amongst the most important display of medieval art to found in Poland.
The museum has a hodgepodge of exhibits on things Polish. This includes an ethnography section where you see all kinds of Polish costumes and such. This was actually fairly interesting. There is also an art collection which is not quite memorable.
The chapel is located in a circular tower to the rear of the castle and is entered to through the castle museum. The frescos depict events in the life of Jesus and are rich in detail. Importantly they are a rare representation of Slavic-Byzantine art. They date from the early 15th century. Surprisingly the frescos had been actually hidden under stocco until accidently discovered in the late 19th century. They have been restored several times, most recently in 1995.
The castle itself has been restored several times and has frequently been used as a prison, including by the occupying Nazi's during World War II. Much of what you see today dates from the early 19th century.
The museum is open on Wednesday to Saturday from 9am to 4pm and on Sunday from 9am to 5pm. The website posted below is in Polish only.
