LOCRIO DE PICA PICA
(sardines in hot sauce with rice )
This Dominican dish although humble is a good choice when the kitchen has a limited budget, and it's one of the two most popular typical spicy Dominican dishes.

It serves: 4 persons
Prior preparation: does Not require prior preparation.
> 4 cups of rice
> 5 tins of Pica Pica sardines
> 6 cups of the water
> 5 Tablespoons of oil
> 4 Tablespoons of tomato paste.
> 1/2 cup of diced italian green peppers.
> 1 Teaspoon of crushed garlic.
> 1/4 cup of diced celery
> 1 Teaspoon of parsley finely diced (optional)
If do not you find Pica Pica sardines take your regular kind in tomato sauce, add Tabasco(Hot) sauce to taste. In a pot, heat a little the oil, add the garlic, the herbs, the tomato paste, the spices and the salt. Add half of the sardines without the suace, let it simmer for a while. Add the sauce that you take from the sardines earlier.
Add the remaining water and bring it to a boil. Add the rice. Stir it regularly to avoid burning in the bottom of the pot.
When all the water has evaporated add the remaining sardines and cover it let it cook for 15 minutes in low heat. Then add the oil and cover again. Wait another 5 minutes. Taste the rice, should be firm but soft. If necessary, let it cook 5 more minutes in very low heat.
