Was it the flirthing waiters? The great tapas? The pitchers of sangria? The live music? The fact that these bars are built under the Plaza in caves?

Maybe it was all of those, but every night I was in Madrid I was drawn to these great tapas bars - each with a theme food.

In each, we'd have a glass of sangria and try a different appetizer. Grilled red peppers and fresh cheese, spicy green chiles fried and salted. Olives. All delicious. Not sure what to order? No problem. The charming staff (usually just one or two men) are happy to provide recommendations and samples.

When I think of Madrid, I'll always think of the strong drink, delicous food and the entertainer at one of the bars - singing "As the Saints Go Marching In", the only American song he knew!
