Paladares are a great way of tasting the local foods and supporting Cubans directly in their private enterprises. The quality and quantity of food is usually better than the state-run restaurants but lately I've noticed the prices are not necessarily a bargain. The LP guidebook's prices are very out of date and the prices have virtually doubled since that guide was published. Havana paladares cost up to $10 for entrees and in the Oriente as little as $1 for a complete meal!

Favorite Dish: Paladares are only supposed to sell chicken, fish and pork. However, some will sell you lobster and other illegal if they can. I love the way they prepare mutton fricasé!
