A typical vegetarian Chinese meal (Shanghai style food) would be rice with some sides, like steamed green vegetables in soy sauce, cubed tofu with chili sauce, fried egg and tomato, or cubed eggplant with tomato and green pepper. Chinese food doesn't use hardly any spices, relying on soy sauce, garlic and spring onions for flavor. Every region has it's own style of cooking though.
It can be very challenging to communicate that you want vegetarian meals. Many times people will give noodles in meat broth or tofu with little bits of pork, thinking that if the dish doesn't contain much meat it counts as vegetarian. A good thing to do is have someone write the Chinese characters for Vegetarian and Buddhist on a notepad for you, and you can show it to your waitresses wherever you go. Another good thing to do is to go in the kitchen with the cooks and pick out the vegetables you want! I've done that several times and have had great results.
