Udaipur is not particularly well served by transit options. Jet Airways has one or two flights a day from Mumbai and one from Delhi, and Indian Airlines also flies these routes. Train service is also limited, with some fairly poor connections running from Delhi/Jaipur and from Mumbai. If you can weasel a seat on any of the flights, it's worth it. Jet Airways is the best domestic airline in India, so it's preferable to Indian Airlines.
