Close your eyes (well, not really because you have to read this) and imagine an outdoor party, almost. The smell of jerked and seasoned fish of all kinds frying is light on the air and soothing to your lungs. People are all around laughing, drinking, talking to strangers, eating. You walk over to a man with a spatula and a white chef shirt. "What can I do you for?" the man asks in his traditional Bajan accent. The menu looms in front of you... Mahi-mahi, grouper, flying fish. He fries up you choice, hands you a plate overflowing with aromatic fish, potatoes, vegetables, and bread. There's a table a few meters away with two strangers sitting at it... you ask to sit and they agree.
The night quickly comes to a close... you say goodbye to your new friends and head back to your hotel to dream of that night happening again.
Favorite Dish: Absolutely the Flying Fish. They have the best that I found on the island, but all the food is good. A local Banks Beer complements the meal perfectly.
