Just as pizza, pasta, wine and coffee are part of the Italian life, so is Olio di Olive, or Olive Oil. The best type to use really depends on what you are doing, but Extra Virgin oil is most widely used. It is made from the first pressing of the olives, and is usually more pure. If you think olive oil is expensive, then consider the alternative....corn, sunflower, or other vegetable oil. questi e non bene per cucina.
I was shocked when I saw one olive oil aisle in the Iperfamila in Viceza. There were literally hundreds of bottles.

Favorite Dish: Another benefit from olive oil is that it's very high in monounsaturated fat. That is the heart healthy fat, which is good for you. Stay away from partially hydrogenated fat oils, and saturated fats, as these actually lead to higher cholesterol rates, blocked arteries, heart attacks and strokes. Wow, all that from some finely placed molecules.
