Thursday is the traditional day for pancakes (and yellow pea soup) in Sweden. Instead of spending time frying individual pancakes in the frying pan, here is a delicious alternative. It can be made with or without bacon
For one family serving (for about 4 persons) you will need the following ingredients: 2.5 dl baking flour; 1/2 teaspoon salt; 6 dl milk; 3 eggs; 2 - 3 tablespoons of margarine or butter; 200 - 300 grams of bacon or (salty) smoked pork (not sliced).
Set the oven thermostat at 225°C. Make the pancake mix. Dice the bacon into cubes of roughly 5 x 5 x 5 mm. Fry in a frying pan until they get a brown surface. Spread the bacon cubes onto a large oven pan, with an edge at least 2 cm high. Another alternative is to brown the bacon directly in the oven pan in the oven!
Pour the pancake mix over the bacon cubes and bake in the middle of the oven until golden brown. Should take about 20 minutes. If you are making the oven pancake without bacon, you need to grease the oven pan well before pouring the mix into it. Let the pancake settle 5 - 7 minutes before cutting.
Serve with lingonberry jam and cold milk!
