Chinese food in Singapore and Malaysia.
Cantonese: Dim Sum, Spring rolls, Shark's fin soup, wan ton soup.
Hokkein: Fried Hokkien Mee (noodles), Hokkien mee (prawn soup with chilli, best in Penang), Lor mee, lak chang (Chinese sausages), popiah(another type of spring roll).
Hainanese: Hainanese Chicken rice, Steamboat.
Teochew: Braised duck
Hakka: Yong Tau Hu
Sichuan: very spicy steamboat
Peking: Crispy Peking duck

I would say the 'main course' of Chinese food is rice with lotsa 'side dishes'. We dun usually finish the 'soup' before the main course, but have the soup with the rice and other 'side dishes'.

Favorite Dish: One can certainly try some authentic Chinese food everywhere, be it in a hawker center or a up market Chinese restaurant. Most cuisines are from the southern part of China, where most of our ancestors came from. The types of cuisines are namely Cantonese, Hokkien, Hainanese, Teochew, Hakka, Sichuan and Peking, in order of popularity.
