The Jubilee Line Extension - any station but especially Bermondsey, North Greenwich, Stratford and Canary Wharf.
You may go through Westminster Station if you are 'doing' Big Ben, and wonder at the sense of space and architecture, so different to smelly, claustrophobic stations like Covent Garden, Tottenham Court Road or (my personal 'worst') Oxford Circus.
The Jubilee Line, connecting points south of the Thames with Westminster in the west to Stratford in the East, is a fascinating architectural success. Several different architectural practices were involved, including Norman Foster.
So, if it's raining one day, get a travel card, take a few hours out of your schedule, and get off at every stop! (This is also a very 'English thing to do, especially if you take a bag of ham sandwiches and a flask of tea.)
