In a way, one unavoidable pleasure is to walk along the shorelines (Golden Horn, Bospherous on both sides, Sea of Marmora) and experience first hand the hustle and bustle of everyday life. Ferries of all sizes disgorging passengers, thousands of men fishing at any available spot (fishing rods for hire) give you a real feel for the city.
(I love this photo, taken in Uskadar, where 2 have been printed one on top of the other - to my mind it really captures the atmosphere and highlights the demands for space at the shoreline).
