Luggage and bags: Compression straps (the things on your sleeping bag to crush it down really small). Invaluable, not least as a washing line.
A padlock and chain. Great for securing luggage on those 24 hour 2nd class sleeper train journeys (the only way to travel) and as a second lock on your hotel room (you never know who has a key for the hotel lock).

Clothing/Shoes/Weather Gear: Unless you're heading to Kashmir or Ladakh in winter don't take any warm weather gear. If you need it you can buy it. It can get a bit chilly on a train at night though. You won't need a sleeping bag but some sort of cover (or even just a light fleece) is missed if you don't have it.

Camping/Beach/Outdoor Gear: Don't bother taking a tent. It's heavy and the hotels are too cheap to bother with campsites. Besides, I've never found a campsite in India.

Miscellaneous: You'll get asked for rupees everywhere you go but in rural areas pens are also asked for by kids (beggars or otherwise), take a few biros with you. For the same reason photos of your family and home are a good conversation topic on a train. Whatever you talk about, just make sure you do. You'll learn a hell of a lot more about a country from the people who live there than you will from a guide book.
