Visit the NY Metropolitan Musuem, art galleries in NoHo/Tribeca, boutiques in SoHo, Times Square, Chinatown, Harlem. Also typical tourist sites like the Statue of Liberty, Ellis Island, Empire State Building, etc...
One could take a quick glance at the NY Met Musuem in one day, but I wouldn't recommend it from personal experience -- there's just too much to explore and it can get a bit rushed and tiring to dash through all in one day. I loved it, along with the art galleries... gave me new ideas and inspiration for other sketches/paintings to do. People watching from shopping the SoHo boutiques also gave me some fashion ideas; there are a few rare good deals if you're lucky. Lots of activity and energy in Times Square. (Didn't get a chance to go to Chinatown this time around) Though a lot of people would say Harlem can be barren and dangerous at times -- from my visitor's perspective, it seems vibrant and full of life from the PEOPLE.
