Favorite Dish: Chicken Soup (Gentse waterzooi van kip)
1 big, meaty chicken
butter or margarine
1 big carrot
a couple of cellery sticks
1 large onion
1 sprig of parsley (with roots)
about 1˝ liter (chicken)stock
2 egg yolks
Cut the chicken into 8 pieces. Butter the casserole. Clean the vegetables, and cut them in pieces. Scrape the parsley-roots, but don't cut them. Keep some parsley-leaves for later. Put all the vegetables into the casserole, season the chicken with salt and pepper, and put it on top of the vegetables. Add the stock, let everything boil slowly for about 45 minutes.
Take out the parsley roots, and mash them. Add them again to the soup. Heat a large bowl and scramble the egg yolks in it. Add the broth, vegetables and pieces of chicken to the eggs while stirring. Sprinkle the rest of the parsley on top.
Waterzooi is chicken soup, but it's eaten as a main course. Serve the soup in a deep bowl, eat it with a spoon, knife and fork (for the chicken). Best eaten with potatoes or bread.
