We usually stay in bed and breakfast accommodation, but in Northern Spain we stayed almost exclusively in three star hotels, because they were so (comparitively) cheap. The best location of any of these was the Parador de Santillana del Mar at Santillana del Mar in Cantabria.

Unique Qualities: The Parador at Santillana del Mar is in the ancient summer palace of the Barreda-Bracho family, built in the 15th and 16th centuries. Even if you end up staying in the modern annexe to the hotel, you can dine in the main building. The big advantage though of this hotel is that it is right in the middle of Santillana del Mar, a magnificent mediaeval town. The problem with Santillana del Mar is that it is too popular. During the day there are hoards of tourists, but by staying in the Parador, you can wander through it's cobbled streets early in the morning or during the evening when you can really capture the atmosphere of the place.
