When a celebrity visits Madrid, you will surely find him/her having dinner at 'Casa Lucio' (Cava Baja St.). This a traditionnal restaurant with simple, excellent recipees, but a little expensive. Besides Madrid has excellent restaurants: fabulous regional restaurants from different parts of Spain, exotic cuisines, nouvelle cuisine.... The prices are relatively higher than in other parts from Spain, but they are still low compared to other European countries, so be ready to delight your 'gourmet' side.
As a tourist, you will probably want to stuck to 'tapas', but it would be a pity that you miss some of the excellent restaurants in Madrid. After all, tapas are usually taken as an appetizer, just to accompany the beer, fino (sherry) or Rioja wine before the main meal.

Favorite Dish: Madrid's traditional cuisine is made of consistent, energetic dishes. The most famous ones are the callos (I think it is the face of the pig in a spicy sauce) and the cocido (a delicious stew with vegetables and pork sausages). These dishes are not the most appropriate for the summer heat, so when visiting in summer I suggest that you go for fish. It is said that the best catches from Spanish coasts are taken directly to Madrid's markets. It is really delicious.
