The Irish tend to dine late -- at 8 PM, the popular restaurants are packed to the gills. If you want to ensure a table, either make reservations or go early (6:30 worked well for me).

Another dining tip: if you want a meal outside the usual hours, many pubs serve food throughout the day. One day I missed lunch (long bus ride) and found myself wanting dinner at about 4 PM, when none of the restaurants in town were open -- but I found a very respectable fish-and-chips in a pub, for about half the going rate for lunch in that town, and overheard some amusing conversations into the bargain.
