If you are looking for village stay-type experience (not trekking) where you would spend about 3 days living with a family in a remote part of the country, you might be interested in this.
The Thai Volunteer Service (TVS) is a foundation in Thailand that, among other things, arranges home stays for those tourists, thai and foreign, who would like to experience rural Thai culture. It is the closest thing to a true ecotourism in Thailand. This doesn't mean birdwatching or bushwacking - this is more like cultural tourism. You live with a family, eat what they eat, sleep in their home, play with the kids, go out to pasture with the animals if you want, help prepare food, collect eggs, as much as you want. Most homes would prefer people who can manage at least a little in Thai.
The branch of TVS that arranges this is known as REST - Responsible Ecological Sustainable Tourism. They can arrange home stays for you in about 13 different provinces at last count (in 2000), so you can choose where you would like to go. It could be in a fishing village in Ranong or a rice farming family in the northeast. I would encourage you to check it out - they truly are interested in the direction of development in Thailand.
FYI, TVS also trains and sends Thai volunteers to rural Thai communites for 1-2 years, much like the Peace Corps or VSO. These are real volunteers working for very little money and working in their own country - far less glamourous then working in a foreign country.
