Buffalo-milk mozzarella is a soft white cheese with a surprisingly subtle flavor. The delicacy of this dish calls for a mild-flavored olive oil.
2 large vine-ripened tomatoes
8 ounces buffalo-milk mozzarella
Fresh basil leaves
2 tablespoons wine vinegar
2tablespoons high- quality but not strong olive oil
Salt and pepper
Cut the tomatoes and cheese into 1/4-inch slices. Fan alternating slices of tomato and cheese, along with a few basil leaves, on serving plates. Drizzle with vinegar and oil. Season to taste with salt and pepper. Garnish with more basil leaves.
Serves 4 as an appetizer.
