from the airport to the HK island or Kowloon, I usually take the train. I buy the return pass from the airport (it is just immediately ahead of you when you get out of custom clearance).
Byt a return ticket as it works out cheaper. There may be a concession rate for elderly travellers. However if there is 4 of you, it may work out cheaper to travel on the taxi.

The train is efficient and runs every 10 minutes...and there are people who will assist you with the luggage. There is plenty of room to place the luggages and within your sight from where you choose to sit. Each sit comes with personal tv as well and the documentary is rather entertaining. The journey on the train is pleasant, nice view and you get travel along the bridge.

Once you reach the station (Kowloon then to HK), you get off the train station, and look around for direction for their shuttle bus. They have these services that brings you to the respective hotels.

The best part of the train service is that on your departure, you can check in your luggage much earlier in the day, and get your boarding pass. Ask them what time is the last train you can board to catch your flight. They have timed it so well, that when you get to the airport, you have just enough time to board the plane. You can spend your last few hours in the city. But r'ber you must board the train from the desitnation you have paid for. Eg, if you have bought the return ticket from the HK airport to Kowloon, you cannot board the train from Hong kong terminal...there will be some massive confusion and you have to pay some surcharge.
