A short drive South of Carcassonne is the delightful Saint Hillaire Abbey. The church is adorned with a sarcophagus by the Master of Cabestany. There is a small fee, but there is also several exhibits including the fine ceiling of the Bishop's room. The cloister is the picture of serenity, with its fountain and double arches. The monks invented sparkling wine at the Abbey back in 1531.
