I did a bakery visit, where we had the chance to see how a baguette is made and learn about what goes on in a bakery. This was from the website meetingthefrench. The bakery visit was one of the many 'meet the french at work' type of visit. For one hour you get to visit an artisan at his craft and learn about it. The only thing is, it depends on who is available during the period you are going to Paris.

They had other interesting tours as well, such as those on patisseries or a cooking class etc. Not exactly cheap, but each tour only involves 8 or less people, so I guess for a semi-private tour it is reasonable. It really depends on what kind of experience you're looking for.
