There are some pretty well attended festivals throughout the state that are worth noting.

Late January brings the Sundance Independent Film Festival mostly in Park City, though there are screenings in SLC as well. Well attended by the stars, directors and producers it is a star studded event.

Easter is the Jeep Safari in Moab. A week worth of 4x4 driving in the desert around town.

Summer brings plenty of small town festivities with Strawberry Days in Pleasant Grove, Swiss Days in Midway, Draper Days in Draper, Raspberry Days in Garden City, Peach Days in Brigham City etc. Most every town will have something they sponsor during the summer to provide fun and entertainment.

Utah Shakespeare Festival in Cedar City is a Tony award winning drama festival with a medley of Shakespeare's plays in a traditional setting.

September brings more:
Greek Festival the second weekend of September celebrates the Greek presence in Utah. Put on as a fund raiser for the local Greek community they serve up the best of greek food and dance.

Oktoberfest celebrated at Snowbird a little early in September.

This is also Utah State Fair time when the quilts and cows and pigs and jam and more from around the state take center stage.
