The most opulent place in Twentynine Palms, the Bistro opened in early 2009. It is also very gay-friendly! Owners Sam and Karen Provost have family connections with Alaskan fisheries, and have the freshest Alaskan seafood, from king salmon to scallops to halibut, flown overnight into Palm Springs, where it is then picked up and brought to the restaurant. The Bistro also features a 16-ounce New York strip, and an 18-ounce ribeye that's superb. The menu is constantly changing, so you won't be bored with the same stuff over and over again. There is a full bar with an extensive selection of imported and domestic beers, red and white wines, champagne, scotch, cordials, and two kinds of real and imported absinthe (Lucid is my favorite).

Favorite Dish: All their seafood choices are to die for, and, if you want something to comfort you, try the Comfort selection. A month ago it was housemade tomato soup and a grilled Muenster cheese sandwich. It is currently a grilled all-beef wiener with caraway sauerkraut and housemade Guinness mustard. Delicious!
