Located a block away from Palmyra's archaeological museum, on the town's main street, the Spring Restaurant is a great place where to stop, whether you want to enjoy a full meal or a light snack. Its owner Mohammed is a friendly and energetic person who treats all his guests with special care. He speaks good english and french, and claims to be fluent in four or five other languages! Since Mohammed is the one taking the orders and preparing the food, he can easily meet any of his guest's request.
The price are decent and the food is fresh and generously served!
I had a chance to check out the kitchen and I was impressed by its cleanliness.

If you have a chance to stop by, I would advise you to try bedouin food. The mensaf served here (see below) is delicious and you will have a hard time trying to find this dish in cities such as Damascus or Aleppo. And if you are still hungry, ask for a couple of mahmouls (cookies) as they are baked by Mohammed's mother in a traditional way!

This is a real family business : Mohammed's brother owns a nearby hotel, which seems to be a good place to crash. He can also organize camel trips in the desert upon request!

Favorite Dish: The mensaf served here is excellent. It is a dish made out of frikké (green wheat), strips of chicken, chickpeas and grilled almonds on top of this. A yoghourt sauce is served on the side. If you don't like wheat, Mohammed can also prepare it with rice...
