My first encounter with viet cuisine, the original one, was in Hanoi, at the emperor, later at Indochine. they were the top of the viet cuisine in hanoi. I realized that viet cuisine could be simplified into a centuries old fusion between french cuisine and chinese cuisine. in some restaurants the chinese side predominates and in some other the french side does, as in Indochine in Hanoi
Here the owners seem chinese vietnamese, who must have immigrated long before Americans lost Saigon, now Ho Chi Minh City. the food here is vietnamese but much more french touch to it, perhaps they get their ingredients fresh rather than from packets.
it is a cosy restaurants. the service is a bit slow. we arrived there around 9 30 pm and were one of the last diners, surprising for a paris restaurant. it is near the latin quarter and with a cluster of other viet restaurants nearby

a glass of white wine, and some Badoit of course
