For dinner, head across the bay of Tampa's Columbia Restaurant. At 95 years, it's the state's oldest and the queen of the city's traditional Spanish and Cuban eateries. Reserve a table facing the dance floor to watch the flamenco show ¨C women bright in flounced dresses, men slim in black pants, clapping, stamping, and flourishing castanets.

Favorite Dish: Order sangria, Spanish red wine flavored with fruit, and paella, a combination of chicken, pork, seafood, and rice spiced with saffron. For dessert, try flan, a caramel pudding.
