Favorite thing: Go to Jerusalem and spend hours or days following the Via Dolorosa and wandering the narrow alleys of the old city, visit the Dome of the Rock and the Wailing Wall and go to the Shrine of the Book and to Yad Vashim. The children's memorial is hauntingly beautiful and should be compulsory. Also go further afield and visit Bethlehem, Massada and Jericho if you can. None take too long to get to and are easily accessible by public transport. I'm not going to get into the politics, but this is a fascinating part of the world and should not be destroyed. Just go as soon as you safely can.

Fondest memory: The Church of the Holy Sepulchre (even with the crowds) and the Dome of the Rock in Jerusalem, climbing up to the settlement ruins at Massada and seeing sunrise over the desert and the Dead Sea, wandering around Bethlehem and contemplating world peace at Yad Vashim.
