In the historical centre they put every night several food stalls that offer huge variety of home-made regional specialities. My favourite place was Barraca de comidas tipicas da Rosa.

You will quickly discover that the real delight of Maranhao is the seafood. They have everything from torta de sururu (mussel pie), casquinha de caranguejo (stuffed crab), ensopado de camarao (shrimp stew), pescada frita (fried fish), camarao (shrimps), bolinho de caranguejo (crab cake) to the city's special rice dish, arroz de cuxa (rice with crushed shrimp, garlic and the stewed leaves of two native plants).

You can choose five dishes plus rice. And you are not going to believe, all together for only 5 RS! I found it the best way to sample a diversity of regional specialities and besides, it was really delicious!! It became a practice for me every night :))
