There are about thousand persons living in Santillana and many of them do live from tourism. One should not be surprised finding a large number of tourist shops over the place. Without this tourist activity Santillana would probably be a ruin.

One finds a number of shops with the excellent Cantabrian cheeses who do compete with the better known "Manchego" cheeses. There are 3 types:
- Queso de Cantabria.
- Queso Picón Bejes-Tresviso based on a mix of cow, sheep and goat milk and matured in natural lime caves at an altitude between 500 and 2000 m.
- Quesucos de Liébana, the most popular of Cantabria, of small size, elaborated from mixtures of milk of cow, sheep and goat, of typical flavour, especially if they are smoked by juniper wood.

Anchoas (anchovies) de Santona are another speciality of the Cantabrian coast, becoming rather expensive now that fishing of this species is severally restricted by the EU.

Orujo is a sweet and aromatic type of aguardiente (or "marc" in French) made in Potes since immemorial times from the residue left after pressing the grapes.
It is served here in mini beer glasses called "chupito" a word which seems linked to French "chope" or beer mug.
