Available through the concierge at the Alyeska Prince Hotel or direcet with Alaska Paragliding, this looks like a great activity. I had some friends decide to do this at the last minute while we were attending a reception at Seven Glaciers. Yes, alcohol was involved!
The safety briefing and waiver signing takes long enough that you're almost sober though.
You don't really jump off a cliff, it is more like a fast sprint down a fairly steep slope.

Usually runs $185, but they paid $100 each as it was a last minute thing. They both raved about the experience for days afterwards. Really was a great ride down the mountain and they have never killed anyone - so they say.

Equipment: All gear is provided - wing, helmet, harness, parachute. Just bring some gumption.
