Do a camping trip in the Outback.
Though readily done on your own, there are great group trips that let you meet fellow travelers and get a locals perspective as well. Lots of great scenery, swimming in billabongs and waterfall clad plunge pools, and camaraderie around the campfire at night.

Directions: We did one out of Alice Springs for the attractions in that area, one out of Darwin for Kakadu and Litchfield parks, and Travelabout for Katherine Gorge.
