Most lndonesian recipes are based on a specific selection of flavouring ingredients pounded together before use. This is called the 'bumbu'. Many dishes are cooked in santan, the liquid obtained from squeezing grated coconut (coconut milk).

Favorite Dish: chicken 'satay', lamb 'soto', grilled fish, and don't forget traditional 'sambal' (chili sauce)
