Cathédrale Notre-Dame de Paris, Paris: 652 reviews and 1,336 photos

Preceded by a Gallo-Roman temple to Jupiter, a Christian basilica dedicated to St Etienne, and a Romanesque church, construction of Notre-Dame de Paris began in 1163 during the reign of Louis VII. It was finally completed around 1345. The building fell into decline over the centuries, suffering it's worst depredations during the Revolution, and was at last given a much needed restoration in the 1820s, carried out in the main by Viollet-le-Duc; who also added the steeple and famous gargoyles.

Personally I think the best view of the cathedral is from the south side, where you can see the flying buttresses which support the choir.
