Galera sand is good for making sand structures. It's not too fine, not too coarse either and holds water excellently so your structures don't go tumbling all the time.
Find a good spot along the beach. I would suggest the far ends of the beach where there are less people and you are less likely to be hit by a stray volleyball or be trampled on by kids chasing each other.
