Not off the beaten path, but a fair drive from Brisbane the Granite Belt is a region with rugged country side made up of huge granite boulders and mountains. In winter this area is the coldest part of Queensland, with night time temp's dropping to near or below 0c at times. Excellent area for walks, camping and long treks.
The most popular and accessible area is Girraween National Park, on the border with NSW, about 30km south of the town of Stanthorpe. Good spot to camp and base yourself for walks. The Pyramid is the main attraction; a hill made of granite and and it's big, BIG - as in it takes 40min's or so to climb up it (see pic's). There's two, the second Pyramid requires mountain climbing gear to scale.
