Peanut soup is an acquired Virginia taste which even this Virginian has yet to acquire. Even so, you will see it on the menu of various restaurants including the Virginia Diner in Wakefield along Route 460 in the heart of Virginia peanut growing country. George Washington served peanut soup as a customary first course. Main ingredients of the soup are creamy peanut butter (I guess in the old days before peanut butter was mass produced, they would mash the peanuts into a paste), celery, onions, and chicken broth.

recipe from the Hotel Roanoke

2 qts. (2 litres) chicken broth
1 small onion, diced
1/4 pound (1/10 kg) butter
1 pint (4,7 decilitres) peanut butter
2 stalk celery, diced
3 tablespoons flour
1/3 teaspoons celery salt
1 tablespoon lemon juice
ground peanuts (out of their shells)

Melt butter in cooking vessel and add onion and celery. Saute for 5 minutes, but do not brown. Add flour and mix well. Add hot chicken broth and cook 1/2 hour. Remove from stove, strain, and add peanut butter, celery salt, and lemon juice. Just before serving, sprinkle with ground peanuts.
