La Pergola is located on top of the Cavalieri Hilton which overlooks Rome, which is one of the best views in my opinion. This is fine dining at it's best. It's formal, but not too stuffy. Big time chef, Heinz Beck is at the helm and does a superb job. Service is top notch. They have a very extensive wine, champagne, coffee, and tea list. They grow some of the tea on the premises and they clip and steep the tea leaves in front of you. The have outdoor seating, but it was full when we dined. Some people make reservations up to six months in advance, if that tells you anything. I made our reservations about one in advance. If you have some cash to spend, this a great choice.

Favorite Dish: There were three of us dining and we shared everything. Everything was so good, I can't pinpoint anyone particular dish.
