As well as balconied houses La Orotava has many Gofio mills in various states of repair and use. Gofio is a kind of cornmeal, a bit like polenta, but quite fine and made from toasted corn, which gives it a very nutty sort of flavour. Most of these mills can be found on Calle Doctor Domingo Gonzalez Garcia and down on Calle Del Collegio, where the mill in this picture is situated.
We went into the mill and an old Spanish guy started talking to us (in Spanish) and showing us the sacks of toasted corn, inviting us to take a handful and smell and taste it, and it was qute nice. In a corner of the room the miller was filling some small sacks of freshly ground Gofio which he then presented to the old guy, who paid him and rode off on a bike. We had assumed he was some kind of guide, but in fact he was just an enthusiastic and helpful customer!
