There are a total of 5 Parque Santiago developments in Las Americas, 1 & 2 are showing their age a bit but still look OK, but 3 & 4 are fantastic (5 is just a leisure/retail development). Beautifully designed and landscaped and with a fantastic pool complex, the apartments are spacious and comfortable and spotlessly clean (take a look at all of the pictures). The kitchen is small but functional, having fridge, oven, grill and 4 plate hob. There's also a toaster and filter coffe maker, but no microwave. You can certainly self-cater in these, if that's what you want, and we did cook for ourselves a few times on this holiday. The (reasonably priced) supermarket was directly opposite our apartment too, so we didn't have far to go for our shopping. With all the cafes and restaurants close at hand, maybe you won't want to be doing that too often though.
Bars, restaurants and shops are all very close at hand and the seafront is literally just ouside the complex . It's a 20 minute walk from there to Los Cristianos and 15 minutes or so to the nightlife centre of Las Veronicas, if that's your scene. Otherwise the whole of Las Americas, Torviscas, Adeje etc are just along the promenade, at varying distances.
I can't think of a better place to stay - even the swanky hotels don't have a pool area to match this one, and the rooms there are not significantly better either. Even if Parque Santiago wasn't a good deal cheaper than those hotels, I'd still choose it every time.
The only drawback that I can think of is that there is no air conditioning. This is no problem in say November through April, but may be a nuisance in the hotter months.
