At the start of the tour you will visit the location where the Bishop entertained his guests outside. The table has a trough in the center that has cold water running through it and was used to cool wine.
His guests were seated at the table for lunch and unseen to his guests the Bishop had a lever under the table that he pulled. It turned on water spouts under each of his guests benches. It was considered not polite to raise from the table before the bishop, so as the unexpected water squirted, his guest would jump up in surprise, only to have to sit down again. Of course the Bishop didn't have a water spout under his seat. :)
