Thanks to AT I now remember the name again, it is called shrimpcroquettes.
The ones they served at the restaurant are the real fresh handmade, not the
deep fried industrial ones you can buy in supermarkets. I surppose.
The kind of shrimps they use are the grey shrimps. They are almost transparant
before cooking but turning pinkish after being boiled in water. These shrimps are harvested at the North Sea.
I asked the attendant at the shoes shop where I could buy the real shrimp croquettes she told me that, they are only served in good restaurants or in specialised fish shops.
The alternative choice, if you can't buy the fresh ones (or make them yourself),
is to buy the deep fried. They are not too bad, but can't compare to the ones I had in this restaurant.
How can you distinguish them by first sight whether you are served the
real ones?
The industrial ones are squared shaped or perfectly cylinder shaped and they
all have the same size all look very equal. Like one egg twins.
However, the hand made can differ a little due to more or less pressure on it when making them.
And last but not least: "The proof of the pudding is in the tasting!"
I am sure when I can compare both kinds I will taste the difference too!
AT mentioned that another favourite croquette in Belgium are the cheese
filled ones. They are filled with Parmesan cheese, and I guess they could be slightly different from this one in the pics.
