This is propably more activity than a must see :), but everyone who's in Krakow at the time it goes on should know...
Juwenalia, the spring break for university students (some 150-200,000 here) is not quite what it is in the West (for example UK), but still is lots of fun.

If you're around in the first half of May you can stick around and find really many attractions waiting just to be discovered.
SO! Apart from tens of concerts which at least SHOULD BE FREE (!) throughout the three-day period (not really a break- classes go on, but many students don't go :P) you may observe or take part in the many-thousand student parade on one of the days, if you have a friend student go and experience the home parties or go the AGH campus and take part in the "grill night" or do... anything you want (unless of course you want to, for example, kill people:P)- at that time- you're allowed to! So enjoy!

This is the only time of the year, excluding New Year, when drinking alcohole in the streets is not illegal :)
